This sweet and sour fish is from Dhifoods, a Maldivian recipe notebook.
You need two pieces of reef fish, cut to chilli-fish size and fried; two onions, cut large; two capsicums, cut in strips; one green bell pepper, cut; two pineapple slices, cut; one teaspoon of cornflour; half a teaspoon of sugar; two spring onions, finely cut; one teaspoon of ginger, very finely cut; one-third of a teaspoon of white pepper; one teaspoon of ajinomoto; half a tablespoon of chilli-garlic sauce; half a tablespoon of tomato sauce; another quarter teaspoon of white pepper; a little salt; and a little oil.
Heat a pan and add a little oil. When it is hot, add the onion and capsicum and stir until they soften slightly. Add the green pepper, pineapple and fried fish. When the pineapple softens a little, add the remaining ingredients one at a time. Mix the cornflour and sugar in about a glass of water and pour that in. Take the pan off the heat when the sauce thickens.
